Ingredients
Measurements:
- 150 ml small brewed coffee shot
chilled
For the milky layer
- 50 g white chocolate
finely chopped
- 15 ml thickened cream
- 15 ml whisky
For the cream mixture
- 60 ml thickened cream
- 30 ml coconut cream
- 1 tsp crème de menthe
Instructions
- 1To make the milky layer, place the white chocolate, cream and whisky in a small saucepan. Stir over medium-low heat until melted and combined. Transfer to an Irish coffee glass and allow to cool.
- 2Meanwhile, to make the cream mixture, place the cream and coconut cream in a measuring jug. Whisk until thick but still pouring consistency, then whisk in the crème de menthe.
- 3Once the milky layer has cooled, pour the chilled brew slowly into the glass over the back of a spoon, to prevent the layers mixing. Pour the crème de menthe mixture into the glass over the back of a spoon.
