Measurements:

  • sugar syrup icon
    Sugar syrup

  • desiccated coconut icon
    Desiccated coconut

    150 ml coconut water
  • coconut flakes icon
    Coconut flakes

For the coffee cream

  • thickened cream icon
    50 ml thickened cream
  • shot cold ristretto espresso icon
    1 shot cold ristretto espresso
  • brown sugar icon
    15 g brown sugar

Instructions

  • 1Dip a large serving glass into the sugar syrup to coat the rim, then dip into the shredded coconut.
  • 2To make the coffee cream, place the cream, ristretto and brown sugar in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.
  • 3Place some ice into the serving glass. Pour over the coconut water and top with coffee cream. Garnish with toasted coconut flakes to serve.
