Sugar syrupto garnish
Desiccated coconutto garnish

150 ml coconut water
Coconut flakestoasted, to garnish
For the coffee cream
50 ml thickened cream
1 shot cold ristretto espresso
15 g brown sugar
Instructions
- 1Dip a large serving glass into the sugar syrup to coat the rim, then dip into the shredded coconut.
- 2To make the coffee cream, place the cream, ristretto and brown sugar in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.
- 3Place some ice into the serving glass. Pour over the coconut water and top with coffee cream. Garnish with toasted coconut flakes to serve.
