Measurements:

  • Earl Grey tea leaves icon
    1 tsp Earl Grey tea leaves
  • boiling water icon
    120 ml boiling water
  • caster sugar icon
    30 g caster sugar
  • ice cube icon
    Ice cubes

    to serve

  • shot cold espresso icon
    1 shot cold espresso
  • full cream milk icon
    100 ml full cream milk
  • dried rose petals icon
    Dried rose petals

    to garnish

For the vanilla cream

  • thickened cream icon
    60 ml thickened cream
  • full cream milk icon
    15 ml full cream milk
  • caster sugar icon
    1½ tsp caster sugar
  • vanilla extract icon
    ½ tsp vanilla extract

Instructions

  • 1Combine the tea leaves and boiling water in a measuring jug. Allow to steep for 5 minutes, then strain. Stir in the sugar and allow to cool.
  • 2To make the vanilla cream, place the cream, milk, sugar and vanilla in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency. Refrigerate until required.
  • 3To serve, fill a large serving glass with ice. Add the cooled earl grey, chilled espresso and milk and stir to combine. Top with vanilla cream and garnish with dried rose petals to serve.
