Measurements:

  • shot cold espresso icon
    1 shot cold espresso
  • iced water icon
    100 ml iced water
  • ice cube icon
    Ice cubes

    to serve

  • raw sugar icon

For the coffee cream

  • thickened cream icon
    50 ml thickened cream
  • shot cold ristretto espresso icon
    1 shot cold ristretto espresso
  • brown sugar icon
    15 g brown sugar

Instructions

  • 1To make the coffee cream, place the cream, ristretto and brown sugar in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.
  • 2Combine the chilled espresso and water in a tall serving glass. Fill the glass with ice. Top with the coffee cream.
  • 3Sprinkle with raw sugar and use a blow torch to caramelise. Garnish with a cinnamon stick to serve.
