To make the coffee cream, place the cream, ristretto and brown sugar in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.
2. Combine the chilled espresso and water in a tall serving glass. Fill the glass with ice. Top with the coffee cream.
Sprinkle with raw sugar and use a blow torch to caramelise. Garnish with a cinnamon stick to serve.
