Measurements:

  • mango puree icon
    30 g mango puree
  • ice cube icon
    Ice cubes

    to serve

  • coconut water icon
    120 ml coconut water
  • medium cold brew shot icon
    1 medium cold brew shot
  • mango pieces icon
    Mango pieces

    to garnish

For the mango cream

  • thickened cream icon
    80 ml thickened cream
  • mango puree icon
    50 g mango puree
  • caster sugar icon
    15 g caster sugar

Instructions

  • 1To make the mango cream, place the cream, mango puree and sugar in a measuring jug. Whisk (or use a hand frother) until thick but still pouring consistency.
    Tip: You can use store bought mango puree or make your own by blending 40g mango with 2 teaspoons sugar syrup and 1 teaspoon fresh lime juice, adjusted to taste.
  • 2To serve, place the mango puree in a large serving glass. Fill the glass with ice, then top with the coconut water and cold brew.
  • 3Top with the mango cream and garnish with skewered mango pieces and toasted coconut flakes to serve.
