- 140 ml full cream milk
- 1 double shot cold espresso
- Strawberry
to garnish
For the strawberry syrup
- 250 g strawberries
trimmed
- 100 g caster sugar
- 3 drops almond extract
- 1 tbsp fresh lemon juice
Instructions
- 1To make the strawberry syrup, place the strawberries, sugar, almond extract and lemon juice in a small saucepan over medium-low heat. Cook, stirring occasionally for approximately 30 minutes or until the strawberries have cooked down into a liquid. Remove from the heat and cool for 10 minutes. Strain into an airtight container or jar.
- 2Spoon 2 tablespoons of the strawberry syrup into a tall serving glass, then top with ice. Carefully pour in the milk and finish with the cold espresso. Garnish with a fresh strawberry to serve.Tip: Store the remaining strawberry syrup in an airtight container in the fridge for up to 1 week. It's also great over ice cream.
