Measurements:

  • olive oil icon
    1 tbsp olive oil
  • rashes streaky bacon icon
    4 rashes streaky bacon
  • large egg icon
    2 large eggs
  • brioche burger buns icon
    2 brioche burger buns

    sliced in half

  • mayonnaise icon
    ¼ cup (60 g) mayonnaise
  • baby rocket icon
    ½ cup (15 g) baby rocket

For the tomato chilli chutney

  • ripe tomato icon
    1 kg ripe tomatoes

    chopped

  • long red chilli icon
    4 long red chillies

    finely chopped

  • grated fresh ginger icon
    40 g grated fresh ginger
  • clove garlic icon
    4 cloves garlic

    grated

  • brown sugar icon
    1 cup (200 g) brown sugar
  • white sugar icon
    ½ cup (100 g) white sugar
  • white wine vinegar icon
    ¾ cup (180 ml) white wine vinegar
  • fish sauce icon
    2 tsp fish sauce
  • salt icon
    1 tsp salt

Instructions

  • 1To make the tomato chilli chutney, place the tomatoes, chillies, ginger, garlic, both sugars and vinegar in a large saucepan and bring to a boil. Reduce the heat and simmer, stirring occasionally for 1 hour 30 minutes, or until reduced and thickened. Season with the fish sauce and salt and set aside to cool.
    Tip: Chutney can be stored in an airtight container, in the refrigerator for up to 2 weeks.
  • 2Place a large frying pan over high heat, add the oil and bacon and fry until crisp. Remove from the pan and drain on paper towel. Reduce the heat to low and allow the pan to cool slightly. Once cooled, add the eggs to the pan and fry to your liking.
  • 3Place the burger buns in the toaster with the cut side facing out. Select Crumpet and press Start to toast.
    Tip: Select your preferred toasting shade.
  • 4Once the buns are golden and toasty, give them a generous swipe of mayonnaise. Stack on the crispy bacon, egg and rocket, then go wild with the chutney. Top with the lids, give them a gentle squish and dig in while they’re still warm.
