Golden Corn Fritter Jaffle with Smashed Avo

For the fritter batter
1 egg
3 tbsp (45 ml) milk
⅓ cup (50 g) plain flour
¼ cup (35 g) cornflour
1 tsp baking powder
¼ tsp fine salt
2 (240 g) corn cobskernels removed, approximately 1½ cups
3 tbsp finely chopped coriander
½ small red onionvery finely chopped
Olive oil spray
For the smashed avo
1 ripe avocado
1 tsp fresh lime juice
Sea saltto taste
To serve
Tomato relish

To make the fritter batter, whisk the egg and milk together in a small jug.

Combine the plain flour, cornflour, baking powder and salt in a bowl. Pour the egg mixture into the dry ingredients and whisk until smooth.

Fold through the corn kernels, coriander and onion. The batter should be thick yet spoonable, holding its shape when dropped from a spoon.

Preheat the jaffle maker. Lightly grease the plates with olive oil spray.

Once preheated, spoon the batter evenly into the jaffle plates, filling each cavity about three-quarters full to allow for expansion. Carefully close the lid and clip the handles together. Toast for 7 minutes, or until golden brown and cooked through.

Meanwhile, make the smashed avo. Halve the avocado, scoop the flesh into a bowl and mash with lime juice using the back of a fork. Season to taste with salt, keeping the texture slightly chunky.

Carefully remove the fritters from the jaffle maker and transfer to a plate. Serve with the smashed avo and tomato relish.
