Homemade Crumpets with Whipped Honey Butter

Measurements:
For the crumpets
- 1 cup (150 g) plain flour
- 1 tsp dried yeast
- ½ tsp salt
- 1 tsp caster sugar
- 1 tsp baking powder
- 1 cup (250 ml) water
- Butter
at room temperature, to grease
For the whipped honey butter
- 120 g unsalted butter
at room temperature
- ¼ cup (90 g) honey
- Pinch sea salt
Instructions
- 1To make the crumpets, place the flour, yeast, salt, sugar and baking powder in a measuring jug and whisk to combine. Gradually add the water and whisk until smooth. Cover and leave in a warm place for 45 minutes, or until doubled in size.
- 2Place a cast iron skillet over medium heat. Grease six 7cm x 3cm crumpet rings with butter. Place the rings in the skillet and divide the batter between the rings. Allow to cook for 10 minutes, or until risen, bubbles appear on the surface and the batter has set around the edge. Turn the crumpets to cook the other side for 1 minute. Remove from the pan, remove the rings and allow to cool. Tip: You can stack two egg rings as an alternative to crumpet rings.
- 3To make the whipped honey butter, place the butter, honey and salt in a bowl and whisk to aerate.
- 4Place the crumpets in the toaster with the bubbled side facing out. Select Crumpet and press Start to toast.Tip: Select your ideal toasting shade.
- 5Serve the golden crumpets with a generous swipe of whipped honey butter while they’re still warm and dreamy.
