Mixed Mushrooms and Prosciutto on Toast

Ingredients
Measurements:
- 4 slices prosciutto
- 100 g unsalted butter
- 450 g mixed mushrooms
such as portobello, oyster and button, coarsely chopped
- 3 cloves garlic
crushed
- 2 tsp thyme leaves
- ½ tsp sea salt
- 2 tbsp chopped flat-leaf parsley
- 2 slices sourdough bread
- 100 g fresh goat cheese
Instructions
- 1Preheat the oven to 200°C.
- 2Meanwhile, place the prosciutto on a baking tray lined with baking paper.
- 3Once preheated, place the prosciutto in the oven and cook for 6 minutes, or until crisp and golden.
- 4Meanwhile, place a large frying pan over medium-high heat, add the butter and heat until foaming. Add the mushrooms and cook, stirring for 4 minutes. Add the garlic and thyme and cook, stirring for a further 2 minutes, or until the thyme and garlic are fragrant and mushrooms golden brown. Add the salt and parsley.
- 5Place the bread in the toaster, then press and hold the Start button until it illuminates blue to toast.Tip: Select your preferred toasting shade.
- 6Spread the goat cheese over the toast, pile on the mushrooms, then crown it with crispy shards of prosciutto. Serve it up and watch it disappear!
