Mixed Mushrooms and Prosciutto on Toast

Measurements:
4 slices prosciutto
100 g unsalted butter
450 g mixed mushroomssuch as portobello, oyster and button, coarsely chopped
3 cloves garliccrushed
2 tsp thyme leaves
½ tsp sea salt
2 tbsp chopped flat-leaf parsley
2 slices sourdough bread
100 g fresh goat cheese

Preheat the oven to 200°C.

Meanwhile, place the prosciutto on a baking tray lined with baking paper.

Once preheated, place the prosciutto in the oven and cook for 6 minutes, or until crisp and golden.

Meanwhile, place a large frying pan over medium-high heat, add the butter and heat until foaming. Add the mushrooms and cook, stirring for 4 minutes. Add the garlic and thyme and cook, stirring for a further 2 minutes, or until the thyme and garlic are fragrant and mushrooms golden brown. Add the salt and parsley.

Place the bread in the toaster, then press and hold the Start button until it illuminates blue to toast.
Tip: Select your preferred toasting shade. - 6
Spread the goat cheese over the toast, pile on the mushrooms, then crown it with crispy shards of prosciutto. Serve it up and watch it disappear!
