Ingredients


Measurements:

  • prosciutto icon
    4 slices prosciutto
  • unsalted butter icon
    100 g unsalted butter
  • mixed mushrooms icon
    450 g mixed mushrooms

    such as portobello, oyster and button, coarsely chopped

  • clove garlic icon
    3 cloves garlic

    crushed

  • thyme leaves icon
    2 tsp thyme leaves
  • sea salt icon
    ½ tsp sea salt
  • chopped flat-leaf parsley icon
    2 tbsp chopped flat-leaf parsley
  • slice sourdough bread icon
    2 slices sourdough bread
  • fresh goat cheese icon
    100 g fresh goat cheese

Instructions

  • 1Preheat the oven to 200°C.
  • 2Meanwhile, place the prosciutto on a baking tray lined with baking paper.
  • 3Once preheated, place the prosciutto in the oven and cook for 6 minutes, or until crisp and golden.
  • 4Meanwhile, place a large frying pan over medium-high heat, add the butter and heat until foaming. Add the mushrooms and cook, stirring for 4 minutes. Add the garlic and thyme and cook, stirring for a further 2 minutes, or until the thyme and garlic are fragrant and mushrooms golden brown. Add the salt and parsley.
  • 5Place the bread in the toaster, then press and hold the Start button until it illuminates blue to toast.
    Tip: Select your preferred toasting shade.
  • 6Spread the goat cheese over the toast, pile on the mushrooms, then crown it with crispy shards of prosciutto. Serve it up and watch it disappear!
