Air-Fried Cauliflower Steaks with Chimichurri

These thick slabs of cauliflower are air fried until perfectly tender then topped with an aromatic blend of fresh herbs, sherry vinegar and extra-virgin olive oil. Aside from being full of flavour, this recipe is also low carb, vegan and gluten-free.

Ingredients


Measurements:

  • medium head cauliflower icon
    2 medium heads cauliflower
  • olive oil icon
    ¼ cup (2 fl oz) olive oil
  • coarse salt icon
    1 tsp coarse salt
  • dried chilli flakes icon
    ½ tsp dried chilli flakes
  • lemon icon
    1 lemon

For the chimichurri

  • firmly packed flat-leaf parsley leaves icon
    1 cup (1 oz) firmly packed flat-leaf parsley leaves
  • firmly packed coriander icon
    ½ cup (½ oz) firmly packed coriander
  • oregano leaves  icon
    2 tbsp oregano leaves
  • jalapeño chilli icon
    1 jalapeño chilli

  • clove garlic icon
    2 cloves garlic
  • coarse salt icon
    1 tsp coarse salt
  • sherry vinegar icon
    2 tbsp sherry vinegar
  • extra-virgin olive oil icon
    ⅓ cup (2¾ fl oz) extra-virgin olive oil

Instructions

  • 1Insert the wire rack into position 4. Select Phase Cook for P1 and set the oven to Air Fry, Super Convection, 425°F, for 23 minutes Press Start for P2, set the oven to Grill, High for 2 minutes and press Start to preheat. Meanwhile, prepare the cauliflower.
  • 2Trim the ends off the cauliflower and cut each head into two steaks, approximately 1-inch thick.
    Tip: A great way to use up the leftover cauliflower, cut into small florets and toss in oil and curry powder then season with salt and pepper. Air fry until starting to caramelise.
  • 3Place the cauliflower on the grilling rack in the roasting pan. Brush with the oil and sprinkle with the salt and chilli flakes. Using a microplane, finely grate the lemon zest over the cauliflower.
  • 4Once preheated, place the pan in the oven and air fry for 23 minutes. The oven will switch to grill for 2 minutes. While the cauliflower cooks make the chimichurri.
  • 5To make the chimichurri, place the herbs, jalapeño, garlic and salt in the bowl of a small food processor and process until finely chopped, scraping down the side occasionally. Add the vinegar and oil and process to combine. Set aside.
  • 6To test if the cauliflower is ready, insert the tip of a knife or skewer into the core, it should slide in easily. If not, cook it a little longer.
  • 7Transfer the cauliflower to a serving plate, top with grated lemon zest and the chimichurri and serve.
