Spice-Crusted Beef with Chimichurri

Ingredients
Measurements:
- 1 (1.4 kg) boneless beef roast
trimmed
- 1 tbsp paprika
- 1 tbsp mustard powder
- 2 tsp ground cumin
- 1 tsp freshly ground black pepper
For the chimichurri
- 1 tbsp extra-virgin olive oil
- 1 tbsp Coarse salt
- ½ cup (120 ml) extra-virgin olive oil
- ½ cup finely chopped flat-leaf parsley
- ½ cup (15 g) finely chopped coriander
- ¼ cup (60 ml) sherry vinegar
- ¼ cup finely chopped eschalot
- 2 cloves garlic
crushed
- 1 tsp dried chilli flakes
- Coarse salt
Instructions
- 1Using kitchen twine, truss roast in 2cm intervals. Combine olive oil, salt and spices in a small bowl and rub all over the roast.
- 2Place roast in Combi Crisp pan and place in microwave in low position. Press Food Menu and select Cook, then Beef, 1.4kg. Press Start to begin cooking.
- 3Make Chimichurri: Combine all ingredients in a small bowl, season with salt and set aside.
- 4Let the roast rest, covered, for 10 minutes before slicing and serving with chimichurri.
