Essential Dulce de Leche

This one’s so good, it should be added to the kids’ science curriculum! Condensed milk cooked sous vide transforms into a silky, rich caramel before your very eyes. Rich and luscious it will take your desserts to heavenly heights. Spread it, or just eat it by the spoonful. Why not use it to make our Dulce de Leche Cheesecakes!

Ingredients


Measurements:

  • sweetened condensed milk icon
    10½ oz sweetened condensed milk

Instructions

    Pour the condensed milk into a 12 oz canning jar and close the lid. Alternatively for the cheesecakes, divide the condensed milk evenly among 6 x 8 fl oz canning jars and close the lids.

    Tip: It's important to not overtighten the lids.

    Attach the HydroPro Plus to the side of a pot or large vessel (max 12 gallons). Place the jar in the vessel and weigh them down to prevent floating. Fill with warm tap water halfway between the minimum and maximum lines. Set the temperature to 195°F and the time to 10hrs using the Sous Vide Toolbox and press Start.

    When the timer signals that the dulce de leche is done, carefully remove the jar(s) from the water bath and allow to cool to room temperature. Place in the refrigerator to cool completely.

    Caramel nirvana has been completed! Use it in frostings, add it to smoothies, spoon over ice cream or spread it on toast. Use as a dip, swirl into brownie batter or use it to make our Dulce de Leche Cheesecakes.
