Blueberry Chia Seed Protein Pudding

Measurements:

  • hot water icon
    ⅔ cup (5½ fl oz) hot water
  • chia seeds icon
    5 tbsp (2 oz) chia seeds
  • frozen blueberries icon
    1⅓ cups (7 oz) frozen blueberries
  • unflavored or vanilla whey protein powder icon
    ½ cup (1½ oz) unflavored or vanilla whey protein powder
  • psyllium husk icon
    4 tsp psyllium husk
  • maple syrup icon
    ¼ cup (2 fl oz) maple syrup
  • vanilla extract icon
    1½ tsp vanilla extract
  • oat milk icon
    ⅔ cup (5½ fl oz) oat milk
  • high-protein Greek-style yogurt icon
    1⅓ cups (11 oz) high-protein Greek-style yogurt

Instructions

    Place the hot water in a large bowl and scatter over the chia seeds. Stir to combine, then set aside for 5 minutes to hydrate, stirring occasionally.

    Carefully assemble the processor with the grey spindle and green S-blade in the bowl. Add the blueberries, protein powder, psyllium husk, maple syrup, vanilla and oat milk and process until smooth, scraping down the side as needed. Add to the chia seeds and stir to combine.

    Add the yogurt to the chia mixture and fold until combined. Set aside for 5 minutes to thicken slightly.

    Stir the mixture then transfer to a large liquid measuring cup and divide among 5 airtight jars.

    The pudding can be served immediately or refrigerated for up to 5 days.
