Brining the turkey in aromatic buttermilk, makes for a fragrant, juicy result. All you have to do is roast until golden and choose your delicious sides!
1Place all the brining ingredients in a bowl and whisk to combine.
2Place the turkey in a large resealable bag and pour over the brine. Seal and massage the bag. Refrigerate for 12 to 16 hours to brine.
3Remove the turkey from the bag and drain well. Wipe off the excess brine using paper towels. Return to the refrigerator, uncovered, for 2 hours to dry.
4Insert the wire rack into position 6. Set the oven to Roast, Convection, 340°F, for 1 hour 25 minutes and press Start to preheat. Meanwhile, continue to the next step.
5For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack on top. Place the turkey on the rack. Brush with the melted butter and season with the salt and pepper.
6Once preheated, place the pan in the oven and cook for 1 hour 25 minutes.
7The turkey is ready when a meat thermometer inserted into the thickest part of the breast, away from the bone, reads a minimum 158°F. If not, cook it a little longer.
Tip: The shape of the turkey can alter the cooking time. For best result, using a probe, test for doneness 5-10 minutes before the end of the cook.
8Remove from the oven, cover loosely with foil and allow to rest for 15 minutes.
