Brining the turkey in aromatic buttermilk, makes for a fragrant, juicy result. All you have to do is roast until golden and choose your delicious sides!

For the buttermilk brine
4 cups (32 fl oz) buttermilk
¼ cup (2½ oz) kosher salt
10 sprigs thyme
5 bay leaves
1 head garlic
halved
1 tbsp black peppercorns
crushed
2 tbsp grated lemon zest
For the turkey
4.7 lb turkey breast
on the bone
3 tbsp (1½ oz) butter
melted
2 tsp kosher salt
Freshly ground black pepper
to season
Instructions
1Place all the brining ingredients in a bowl and whisk to combine.
2Place the turkey in a large resealable bag and pour over the brine. Seal and massage the bag. Refrigerate for 12 to 16 hours to brine.
3Remove the turkey from the bag and drain well. Wipe off the excess brine using paper towels. Return to the refrigerator, uncovered, for 2 hours to dry.
4Insert the wire rack into position 6, then in Breville+ press Start to preheat and follow along for the rest of the recipe.
5For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack on top. Place the turkey on the rack. Brush with the melted butter and season with the salt and pepper.
6Once preheated, place the pan in the oven and start the timer.
7The turkey is ready when a meat thermometer inserted into the thickest part of the breast, away from the bone, reads a minimum 158°F. If not, give it a bit more.
Tip: The shape of the turkey can alter the cooking time. For best result, using a probe, test for doneness 5-10 minutes before the end of the cook.
8Remove from the oven, cover loosely with foil and allow to rest for 15 minutes.
