Ultimate Potato Gratin
Blankets of creamy potato baked until bubbling and golden brown, this classic accompaniment is the ultimate comfort food.

Ingredients
Measurements:
3 lb russet potatoeswashed, peeled
1 cup (8 fl oz) heavy cream
1 tsp kosher salt
½ tsp freshly ground black pepper
2 tsp fresh thyme leaves
1 clove garlicminced
½ cup (2 oz) finely grated Gruyere cheese
Chopped chivesto serve
Cracked black pepperto serve
Instructions
- 1Using a food processor, slice the potatoes into 1/8-inch thick slices and place in a bowl.
- 2Add the cream, salt, pepper, thyme and garlic to the potatoes and mix to coat.
- 3Layer the potatoes in a 8-inch square 2½-inch deep baking dish. Pour over the cream that is left in the bowl and sprinkle with the cheese. Cover with a sheet of parchment paper then foil. The parchment paper stops the cheese sticking to the foil.
- 4Insert the oven rack in position 3 Down. Set the oven to Bake & Roast, Super Convection, 350°F, for 1 hour 15 minutes and press Start to preheat.
- 5Once preheated, place the dish in the oven and bake for 1 hour 15 minutes. When there is 25 minutes remaining on the timer, remove the foil and parchment paper and continue cooking.
- 6The gratin should be golden brown. Test the potatoes with a skewer to check if they are tender. If not, press A Bit More. Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
- 7Sprinkle the gratin with chives and cracked pepper and serve.
