Using a food processor, slice the potatoes into 1/8-inch thick slices and place in a bowl.
Add the cream, salt, pepper, thyme and garlic to the potatoes and mix to coat.
Layer the potatoes in a 8-inch square 2½-inch deep baking dish. Pour over the cream that is left in the bowl and sprinkle with the cheese. Cover with a sheet of parchment paper then foil. The parchment paper stops the cheese sticking to the foil.
Insert the oven rack in position 3 Down. Set the oven to Bake & Roast, Super Convection, 350°F, for 1 hour 15 minutes and press Start to preheat.
Once preheated, place the dish in the oven and bake for 1 hour 15 minutes. When there is 25 minutes remaining on the timer, remove the foil and parchment paper and continue cooking.
The gratin should be golden brown. Test the potatoes with a skewer to check if they are tender. If not, press A Bit More.
Sprinkle the gratin with chives and cracked pepper and serve.
