The Breville Food Processor is a herby dream machine, chopping the parsley and mint that is the backbone of this Middle Eastern salad. Slicing and dicing onion and tomato is equally easy, then you just mix and season.

Ingredients
Measurements:
½ cup (3½ oz) couscous
⅔ cup (5½ fl oz) boiling water
1 clove garlic
peeled
2½ cups (2½ oz) flat-leaf parsley
½ cup (½ oz) mint
2 green onions
trimmed and cut into long lengths
2 tomatoes
cored
2 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1½ tsp kosher salt
½ tsp crushed red pepper
Instructions
1Place the couscous in a heatproof bowl, pour over the boiling water. Cover and let stand for 5 minutes.
2Carefully assemble the processor with the grey spindle and green S-blade™ in the bowl. Add the garlic and process until coarsely chopped, scraping down the side occasionally. Add the parsley and mint and process until finely chopped, scraping down the side occasionally.
3Carefully remove the S-blade™ from the processor and place the orange adjustable slicer set on 2 in the bowl. Slice the green onions over the herbs.
4Remove the spindle and slicer from the bowl and assemble with the red dicing gearbox, dicing grid and blade. Dice the tomatoes over the herb mixture. Transfer to a large bowl.
Tip: Use the red dicing cleaner to push through any tomato caught in the dicing grid.
5Use a fork to fluff up the couscous. Add to the herb mixture and stir to combine.
6Add the oil, lemon juice, salt and half the pepper flakes to the tabbouleh and mix to combine.
7Serve the couscous tabbouleh sprinkled with the remaining pepper flakes.
