Honey and Rosemary Activated Almonds

Ingredients
Measurements:
8 oz raw almonds
2 tbsp kosher salt
For the honey rosemary glaze
¼ cup (3 oz) honeywarmed
1½ tbsp turbinado raw sugar
1 tsp finely chopped rosemary
1 tsp kosher salt

Place the almonds and salt in a bowl and cover with cold water. Cover and stand at room temperature for 12 hours. Activation initiates the sprouting process which increases nutritional value and enhances digestibility.

Rinse under cold water and drain well. Spread in a single layer in the air fry basket.

Place the basket in rack position 3. Set the oven to Dehydrate, Super Convection, 100°F, for 24 hours and press Start. Dehydrate until the almonds are dry and crunchy on the outside and still slightly soft in the center.

Insert the wire rack into position 6. Adjust the oven to Bake, Convection, 350°F, for 8 minutes, confirm Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.

Place the almonds in a bowl, pour over the honey and stir to coat. Add the sugar, rosemary and salt and stir.

Grease and line the roasting pan with parchment paper. Spread the almonds in a single layer in the pan.

Once preheated, place the pan in the oven and cook for 8 minutes. When the Rotate Remind signals, rotate the pan, stir and continue cooking.

The almonds should be golden brown. If not, cook for a couple more minutes. They will be extremely hot so take care when removing from the oven.

Cool completely before serving. Store in an airtight container, for up to 5 days.
