Cranberry Sauce with Orange and Spices

Ingredients
Measurements:
1 orangezest grated and juiced, plus extra zest to serve
4 cups (1 lb) frozen cranberries
½ tsp ground cinnamon
½ tsp ground ginger
¼ tsp kosher salt
⅓ cup (2¼ oz) white sugar
⅔ cup (5 oz) light brown sugar
Instructions
- 1Insert the wire rack into position 6, then in Breville+ press Start to preheat and follow along for the rest of the recipe.
- 2Place the zest, juice, cranberries, cinnamon, ginger, salt and sugar in a 8-inch ovenproof dish and stir to combine.
- 3Once preheated, place the dish in the oven and start the timer. When the oven signals, stir the sauce. When the oven signals again, add the brown sugar. When the oven signals a third time, stir again.
- 4The cranberries should have burst and the base of the dish should be lightly covered with juice. If not, give it a bit more.
- 5Remove from the oven and stand for approximately 10 minutes to allow the mixture to cool and thicken slightly.
- 6Pour the sauce into a serving dish and scatter with zest. The sauce will thicken as it cools.Tip: Sauce will keep in an airtight container in the refrigerator for up to 1 week.
