Combine the shallot, garlic, wine and cream in a large measuring cup.
Insert the wire rack into position 7 and the air fry basket into position 1. Set the oven to Air Fry, Super Convection, 390°F, for 20 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.
Place a rectangular piece of parchment paper approximately 10-inch x 18-inch, on top of a piece of lightly greased foil, approximately 12-inch x 20-inch. Lightly grease the parchment paper. Repeat this process to create a second sheet.
Place 1 sheet of the foil and parchment onto the pizza pan or flat tray. Place the mussels in a single layer on the parchment paper. Top with the second sheet of parchment and foil. Fold and crimp the edges of the two shorter sides and one longer side until well sealed. Slide the parcel into the roasting pan. With the parcel open, tilt the pan and pour in the cream mixture. Fold and crimp the remaining side until well sealed.
Once preheated, place the pan with the mussels on the oven rack. Add the fries to the basket in an even layer and air fry for 20 minutes. When the Rotate Remind signals, shake and turn the fries and continue cooking.
The fries should be golden and crisp. Carefully open the parcel. The mussels are ready when the shells are open. If not, reseal the parcel well and air fry a little longer.
Season the fries with salt. Open the mussels parcel, sprinkle with the pepper and parsley.
Pile hot, crispy frites onto a plate alongside a bowl of mussels bathed in aromatic broth, then dunk and scoop to your heart’s content. Serve with a wedge of lemon and some crusty bread.
