1 oz butter
2 shallots
finely chopped
2 cloves garlic

6 oz frozen spinach
thawed, drained and squeezed
5 oz ricotta cheese
¾ cup (2½ oz) shredded mozzarella cheese
1 cup (2¾ oz) finely grated parmesan cheese
¼ tsp kosher salt
Freshly ground black pepper

12 sheets filo pastry

4¼ oz butter

Instructions
1Place 1 oz butter in a medium pan over medium heat. Once melted, add the shallots and saute for about 3 minutes. Add the garlic and continue cooking, stirring for 1 minute. Add the spinach to the shallots and sweat for about 1 minute. Transfer to a bowl, add the ricotta, mozzarella and parmesan and mix to combine. Add the salt and season with pepper. Set aside.
2Place a sheet of pastry on a piece of parchment paper. Brush with some melted butter. Top with another 2 sheets of pastry, buttering between each layer. Brush the top with melted butter, cover with parchment paper, then refrigerate for 20 minutes to set. Repeat with remaining pastry sheets and butter.
Tip: Cover pastry not being used with a damp dish towel to prevent drying.
3Once the butter has set, remove from the refrigerator. Cut the pastry stack lengthwise into 4 strips (approximately 3¼-inch wide). Working with one strip at a time, turn over so the butter side is on the countertop. Place a heaped tablespoon of spinach mixture in one corner of pastry. Fold over diagonally to form a triangle. Continue folding, retaining triangle shape.
4Place the triangles in a single layer, evenly spaced apart in the air fry basket. Repeat with the remaining pastry and spinach mixture. Refrigerate while the oven preheats.
5Insert the wire rack into position 8. Place the roasting pan on the rack to catch any drips during cooking. Set the oven to Air Fry, Super Convection, 375°F, for 14 minutes and press Start to preheat.
6Once preheated, insert the basket into rack position 3 and air fry for 14 minutes. When there is 7 minutes remaining on the timer, reduce the temperature to 350°F, and continue cooking.
7The triangles should be golden brown and crisp. If not, air fry them a little longer.
8Once golden and crisp, let the triangles cool slightly before serving. Enjoy them warm as a snack or appetizer, or make it a meal by pairing with a fresh green salad. However you serve them, they're sure to be a hit!
