Air-Fried Buffalo Chicken Wings with Blue Cheese Sauce
Sweet n’ spicy, crispy n’ sticky, these Buffalo wings are cooked in the Smart Oven Air Fryer Compact. It is so perfectly designed it literally has its own Wings function that can be easily adapted depending on the number of wings you cook. Tossed in our signature Buffalo sauce and finished off with a side of blue cheese sauce. It’s win wing situation!

Ingredients
Measurements:
15 chicken wing drumettes and flats (party wings)
1 tsp kosher salt
1 tsp cornstarch
½ tsp baking powder
Celerycut into sticks to serve
For the Buffalo sauce
⅓ cup (2¾ fl oz) hot sauce
1½ oz unsalted buttermelted
2 tsp light brown sugar
1½ tsp apple cider vinegar
½ tsp kosher salt
¼ tsp garlic powder
For the blue cheese sauce
2¾ oz creamy blue cheesecrumbled, plus extra for garnish
¼ cup (2 oz) sour cream
2 tbsp mayonnaise
2 tsp fresh lemon juice
1 tsp milk
1 clove garlicminced
Instructions
- 1Line the roasting pan with foil and set aside. Insert the oven rack into position 3 Down. Set the oven to Wings, Darkness 2, select 15 Pieces and press Start to preheat. Meanwhile, continue to the next step.
- 2Place the wings on paper towels and pat dry to remove any excess moisture.
- 3Combine the salt, cornstarch and baking powder in a small bowl. Place the wings in a large bowl, sprinkle with the dry mix and toss to evenly coat. Place the wings in a single layer, evenly spaced apart in the air fry basket.
- 4Once preheated, place the roasting pan on the rack to catch any drips during cooking. Place the basket into position 1 and air fry for 28 minutes. When the oven signals, turn the wings. Add an extra minute to the cooking time and continue cooking. Meanwhile, continue to the next step.
- 5To make the Buffalo sauce, place all the sauce ingredients in a large bowl and whisk to combine. Set aside.
- 6To make the blue cheese sauce, place the blue cheese, sour cream and mayonnaise in a bowl and whisk to combine. Add the lemon juice, milk and garlic and whisk until well combined. Set aside.
- 7The wings should be golden brown. If not, press A Bit More.Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
- 8When the wings have finished cooking, remove the air fry basket and roasting pan from the oven. Move the oven rack to position 2 Down. Adjust the oven to Air Fry, Super Convection, 440°F, for 5 minutes and press Start.
- 9Add the wings to the Buffalo sauce and toss to coat. Place the wings evenly spaced apart, and the sauce from the bowl in the roasting pan.
- 10When the oven signals, place the pan in the oven and air fry for 5 minutes. When the oven signals, check the wings and rotate the pan if necessary.
- 11The wings should be golden brown and cooked through. If not, press A Bit More.Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
- 12Turn the wings in the sauce and allow to rest for 2 minutes.
- 13Serve the wings with the blue cheese sauce and celery sticks.
