Inspired by the Japanese flavors from the region of Nagoya, these wings are the perfect appetizer for an Asian feast. The glaze is sweet and salty with a good hit of ginger, garlic and sake wine.

For the glaze
⅓ cup (2¾ oz) Japanese soy sauce
⅓ cup (2¾ oz) mirin
⅓ cup (2¾ oz) cooking sake
2 tbsp sugar
1 tbsp finely grated ginger
2 cloves garlic
minced
For the chicken wings
3 lb chicken wing drumettes and flats (party wings)
1 tbsp baking powder
1 tsp kosher salt
1 tbsp sesame seeds
1 green onion
thinly sliced, to serve
Instructions
1Insert the wire rack into position 7. Place the roasting pan on the rack to catch any drips during cooking. Set the oven to Air Fry, Super Convection, 380°F, for 15 minutes and press Start to preheat. Meanwhile, continue to the next step.
2To make the glaze, place all the glaze ingredients in a small saucepan and bring to a boil over medium-high heat. Reduce the heat to low and simmer for 20 minutes, or until reduced by half. Meanwhile, prepare the chicken wings.
3Place the chicken on paper towels and pat dry to remove any excess moisture.
4Combine the baking powder and salt in a bowl. Place half the chicken and half the salt mixture in a large bowl and toss to coat. Add the remaining chicken and salt mixture and toss.
Tip: The baking powder helps to crisp and brown the chicken.
5Arrange the chicken in a single layer in the air fry basket.
6Once preheated, place the basket in rack position 3 and air fry for 15 minutes. When the oven signals at the end of cooking, adjust the oven to Broil, High, for 10 minutes and press Start. Halfway through broiling turn the chicken.
7The chicken should be lightly browned and cooked through. If not, broil a little longer.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
8Remove the roasting pan and move the wire rack to position 4. Pour off any fat from the pan.
9Place the chicken in the roasting pan and pour over the glaze. Turn gently to coat and arrange in an even layer. Sprinkle with the sesame seeds and return to the oven. Set the oven to Broil, High, for 5 minutes and press Start.
10The chicken should be brown and sticky. If not, broil a little longer.

11Transfer the chicken to a serving plate. Pour over any pan juices and sprinkle with the green onion.
