Ingredients
Measurements:
½ stick (2 oz) unsalted butter
1 yellow onionfinely chopped
3 tbsp all-purpose flour
4 sprigs thyme
1 bay leaf
1 tsp kosher salt
2 cups (16 fl oz) milk
1 cup (8 fl oz) chicken stock
9 oz macaroni
¾ cup (6 fl oz) heavy cream
1 tbsp truffle oil
8 oz raw lobster meatcoarsely chopped
½ cup (1¾ oz) grated Gruyere cheese
½ cup (2 oz) grated cheddar cheese
1 tbsp chopped chives
1 lemonzest grated
For the crumb topping
½ cup (1 oz) panko breadcrumbs
2 tbsp (1 oz) unsalted buttermelted

Insert the wire rack into position 6 and set the oven to Bake, Convection, 375°F, for 15 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.

Melt the butter in a 12-inch (3.5-quart) ovenproof pan over high heat. When foaming, reduce the heat to medium and add the onion. Cook, stirring for 3 minutes, or until soft. Add the flour, thyme, bay leaf and salt and cook, stirring for 1 minute.

Gradually add the milk, stirring constantly to avoid lumps. Add the stock and stir to combine. Bring to a boil, then add the macaroni. Return to a boil and cover.

Once preheated, place the pan in the oven and bake for 15 minutes. When the Rotate Remind signals, carefully remove the lid, stir the pasta, cover and continue cooking. Meanwhile, prepare the crumb topping.

To make the crumb topping, place the breadcrumbs in a bowl and pour over the melted butter. Mix to combine and set aside.

Remove the pan from the oven. Adjust the oven to Phase Cook for P1 and set the oven to Roast, Super Convection, 400°F, for 1 minute. Press Confirm for P2 and set the oven to Broil, High, for 5 minutes and press Start to preheat. Meanwhile, carefully remove the lid from the pan. Add the cream, truffle oil, lobster meat and cheeses to the pan, and stir to combine. Spread evenly over the pan, then sprinkle with the crumb topping.

Move the wire rack to position 4. Return the uncovered pan to the oven and roast for 1 minute in P1. The oven will automatically switch to broil to brown the top.

The crumbs should be golden brown. If not, broil a little longer.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it. - 9
Top with chives and lemon zest and serve.
