Lobster Mac and Cheese Pasta Helper

When your old buddy mac n' cheese goes on a classy date with luxury lobster—this is what happens. Think Hamburger Helper, but dressed to impress in a suit and bow tie. Creamy cheese sauce infused with chives and a hint of lemon wraps around tender macaroni and fresh lobster, all crowned with a golden, crispy crumb topping. A drizzle of truffle oil seals the deal—pure heaven on a plate.

Ingredients


Measurements:

  • ½ stick (2 oz) unsalted butter icon
    ½ stick (2 oz) unsalted butter
  • yellow onion icon

  • all-purpose flour icon

  • sprig thyme icon
    4 sprigs thyme
  • bay leaf icon
    1 bay leaf
  • kosher salt icon
    1 tsp kosher salt
  • milk icon
    2 cups (16 fl oz) milk
  • chicken stock icon
    1 cup (8 fl oz) chicken stock
  • macaroni icon
    9 oz macaroni
  • heavy cream icon
    ¾ cup (6 fl oz) heavy cream
  • truffle oil icon
    1 tbsp truffle oil
  • raw lobster meat icon
    8 oz raw lobster meat

    coarsely chopped

  • grated Gruyere cheese icon
    ½ cup (1¾ oz) grated Gruyere cheese
  • grated cheddar cheese icon
    ½ cup (2 oz) grated cheddar cheese
  • chopped chives icon
    1 tbsp chopped chives
  • lemon icon
    1 lemon

    zest grated

For the crumb topping

  • panko breadcrumbs icon
    ½ cup (1 oz) panko breadcrumbs
  • unsalted butter icon
    2 tbsp (1 oz) unsalted butter

    melted

Instructions

  • 1Insert the wire rack into position 6 and set the oven to Bake, Convection, 375°F, for 15 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.
  • 2Melt the butter in a 12-inch (3.5-quart) ovenproof pan over high heat. When foaming, reduce the heat to medium and add the onion. Cook, stirring for 3 minutes, or until soft. Add the flour, thyme, bay leaf and salt and cook, stirring for 1 minute.
  • 3Gradually add the milk, stirring constantly to avoid lumps. Add the stock and stir to combine. Bring to a boil, then add the macaroni. Return to a boil and cover.
  • 4Once preheated, place the pan in the oven and bake for 15 minutes. When the Rotate Remind signals, carefully remove the lid, stir the pasta, cover and continue cooking. Meanwhile, prepare the crumb topping.
  • 5To make the crumb topping, place the breadcrumbs in a bowl and pour over the melted butter. Mix to combine and set aside.
  • 6Remove the pan from the oven. Adjust the oven to Phase Cook for P1 and set the oven to Roast, Super Convection, 400°F, for 1 minute. Press Confirm for P2 and set the oven to Broil, High, for 5 minutes and press Start to preheat. Meanwhile, carefully remove the lid from the pan. Add the cream, truffle oil, lobster meat and cheeses to the pan, and stir to combine. Spread evenly over the pan, then sprinkle with the crumb topping.
  • 7Move the wire rack to position 4. Return the uncovered pan to the oven and roast for 1 minute in P1. The oven will automatically switch to broil to brown the top.
  • 8The crumbs should be golden brown. If not, broil a little longer.
    Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
  • 9Top with chives and lemon zest and serve.
