Air-Fried Spiced Lamb Meatballs with Tomato and Feta

Classic meatballs in tomato sauce have been upgraded with Middle Eastern inspired flavors. Deliciously tender and moist, these lamb meatballs are air-fried.

Ingredients


Measurements:

Tomato Sauce

  • olive oil icon
    2 tbsp olive oil
  • onion icon
    1 onion

    finely chopped

  • ground cinnamon icon
    1½ tsp ground cinnamon
  • ground cumin icon
    ¾ tsp ground cumin
  • ground coriander icon
    ½ tsp ground coriander
  • can crushed tomatoes icon
    1 x 28 oz can crushed tomatoes
  • white sugar icon
    1 tsp white sugar
  • kosher salt icon
    ¼ tsp kosher salt

Tomato Sauce

  • clove garlic icon
    1 clove garlic

    finely chopped

Meatballs

  • ground lamb icon
    1 lb ground lamb
  • dried packaged breadcrumbs icon
    ¼ cup (¾ oz) dried packaged breadcrumbs
  • red onion icon
    ½ red onion

    finely chopped

  • large egg icon
    1 large egg

    lightly beaten

  • finely chopped cilantro leaves icon
    1 tbsp finely chopped cilantro leaves
  • ground cumin icon
    1 tsp ground cumin
  • ground coriander icon
    1 tsp ground coriander
  • clove garlic icon
    1 clove garlic

    finely chopped

  • kosher salt icon
    ½ tsp kosher salt

To Serve

  • feta cheese icon
    2 oz feta cheese

    crumbled

  • cilantro leaves icon
    ¼ cup (¼ oz) cilantro leaves

    coarsely chopped

  • steamed couscous icon
    Steamed couscous

    to serve

Instructions

  • 1Heat the oil in a saucepan over medium heat. Add the onion and cook, stirring for 3 minutes, or until just soft. Add the garlic and cook, for 1 minute, or until fragrant. Add the spices and cook for a further 1 minute.
  • 2Add the tomatoes, sugar and salt and stir. Bring to a boil, reduce the heat to low and simmer, stirring occasionally for 20 minutes, or until thickened. Meanwhile, continue to the next step.
  • 3Place all the meatball ingredients in a bowl and mix well.
  • 4For easy cleaning and to avoid burning, line the roasting pan with foil and place the broiling rack in the pan. Roll heaped tablespoons of the meatball mixture into balls. Place them on the rack, evenly spaced apart.
  • 5Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 435°F, for 15 minutes and press Start to preheat.
  • 6Once preheated, place the pan in the oven and cook for 15 minutes.
  • 7The meatballs should be browned and cooked through. If not, cook a little longer.
  • 8Spoon the tomato sauce into a serving dish and place the meatballs in the sauce. Serve sprinkled with the feta and cilantro and couscous on the side.
