Chorizo, Haloumi and Spinach on Toasted Focaccia

Measurements:
3 Spanish-style chorizo sausageshalved lengthwise
8¾ oz haloumi cheesesliced
4 pieces focaccia bread
2¾ oz baby spinach leaves
2 tomatoessliced
Saltto season
Freshly ground black pepperto season
⅓ cup mayonnaise
Instructions
- 1Preheat the sandwich press until the READY light illuminates.
- 2Place the chorizo on the sandwich press, lower the lid and cook for 2-3 minutes. Remove the chorizo from the sandwich press and carefully wipe sandwich press clean with paper towel.
- 3Place the haloumi on the sandwich press, lower the lid, and cook for 1 minute, then remove.
- 4Dice the chorizo. Cut the bread in half horizontally.
- 5On the bases of the bread, arrange the spinach, tomatoes, chorizo and haloumi. Season with salt and pepper. Spread the bread tops with the mayonnaise and place on top to sandwich.
- 6Place the sandwiches onto the sandwich press, lower the lid and cook for 2-3 minutes until the bread is toasted and the filling is heated through. Remove using a silicone spatula.
