Pineapple Sunshine

A bright, fruit forward juice where pineapple takes the lead, supported by the gentle sweetness of yellow bell pepper and carrot. Orange and lemon bring a fresh citrus lift, resulting in a smooth, refreshing blend with a balanced finish. Serve well chilled.

Makes about 4 cups

Ingredients

Measurements:

  • ripe pineapple icon
    2 lb ripe pineapple

    peeled and coarsely chopped (you’ll need 1½ lb flesh), plus extra for garnish

  • medium yellow bell pepper icon
    3 (1¼ lb) medium yellow bell peppers
  • medium carrot icon
    2 (8 oz) medium carrots
  • medium orange icon
    2 (1 lb) medium oranges

    peeled and pith removed

  • small lemon icon
    1 (3½ oz) small lemon

    peeled and pith removed

Instructions

    With the motor on Boost speed, place the pineapple into the feed chute and use the food pusher to gently guide the pineapple down. Repeat with the bell peppers and carrots.

    Tip: To extract the maximum amount of juice, always push the food pusher down slowly.
  • 2

    Switch to Fast speed and juice the oranges and lemon.

  • 3

    Stir gently to combine, then pour into chilled glasses. Garnish with a pineapple wedge and serve immediately.
