Caramelized apples wrapped in puff pastry and air fried until deliciously golden, crisp and flaky. Serve with softly whipped cream makes them the perfect ending to any meal.

2 small Granny Smith apples
(about 10½ oz total) peeled, cored and cut into ½-inch pieces
1 oz unsalted butter
¼ cup (1¾ oz) dark brown sugar
½ tsp vanilla extract
½ tsp fresh lemon juice
½ tsp ground cinnamon
Pinch of kosher salt
1 large egg
1 tsp water
1 sheet frozen puff pastry (9 1/2-inch square)
just thawed
Turbinado raw sugar
for sprinkling
Cooking spray
Powdered sugar
for dusting
Instructions
1Place the apples, butter, brown sugar, vanilla, lemon juice, cinnamon and salt in a medium saucepan over medium heat. Cook, stirring occasionally, for 3 minutes, or until simmering. Cover and continue cooking, stirring occasionally, for 6 minutes, or until the apples are tender and the syrup is thick.
2Spread the filling in a shallow dish and refrigerate for 20 minutes to cool. This will prevent the pastry from getting soggy.
3Whisk the egg and water together to make the egg wash. The water thins down the egg making it easier to brush.
4Cut the pastry sheet into 4 squares.
5Working with one square at a time, brush the edges with the egg wash. Place a quarter of the apple mixture in the center. Fold in half diagonally and press to remove air bubbles and seal. Press with a fork to seal and trim the edges, if necessary. Repeat with the remaining pastry and filling.
6Transfer the turnovers to a sheet pan lined with parchment paper and refrigerate for 30 minutes, or until the pastry is firm.
Tip: Turnovers can be frozen at this stage for up to 1 month. Thaw for 20 minutes before cooking.
7Insert the oven rack into position 3 Down. Place the roasting pan on the rack to catch any drips during cooking. Set the oven to Air Fry, Super Convection, 325°F, for 30 minutes and press Start to preheat. Meanwhile, continue to the next step.
8Brush the turnovers with the egg wash and score the pastry 3 times. Sprinkle with the turbinado sugar. Spray the air fry basket with oil and place the turnovers, evenly spaced in the basket.
9Once preheated, place the basket into position 1 and air fry for 30 minutes. When the oven signals halfway through cooking, check the turnovers and rotate the basket if necessary.
10The turnovers should be browned, puffed and crisp. If not, press A Bit More.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
11Dust the turnovers with powdered sugar. Serve warm or at room temperature.
