Leftover Turkey Sandwich

Measurements:
6 bacon slices
¼ cup (2 fl oz) water
½ red onionthinly sliced
¼ cup (2 oz) mayonnaise
2 tbsp whole grain mustard
4 slices of bread
4 oz sliced leftover cooked turkey
3 oz briesliced
¼ cup (2¾ oz) cranberry sauce
¾ oz baby arugula
Softened butterto spread
Instructions
- 1Insert the wire rack into position 6, then in Breville+ press Start to preheat and follow along for the rest of the recipe.
- 2Place the bacon in the roasting pan and add the water.
- 3Once preheated, place the pan in the oven and start the timer. When the oven signals, add the onion and continue cooking. Meanwhile, make the sauce.
- 4Combine the mayonnaise and mustard in a small bowl.
- 5Spread the bread with the mayonnaise mixture. Place the turkey on 2 slices of bread and top with the brie. Spoon over the cranberry sauce.
- 6The bacon should be crisp and the onion softened. If not, give it a bit more.
- 7Remove the bacon from the oven and adjust the oven. Meanwhile, carefully place the bacon and onion on top of the cranberry sauce and top with the arugula. Sandwich with the bread, mayonnaise side down.
- 8Place the sandwiches in the clean roasting pan and spread the outer side with the softened butter. Turn the sandwiches over and butter the other side.
- 9Place the pan in the oven and start Autopilot. When the oven signals, turn the sandwiches over and continue cooking.
- 10The bread should be golden brown and the cheese melted. If not, give it a bit more.
- 11Cut the sandwiches in half and serve.
