Heat the oil in a frying pan over medium heat. Add the onion and salt and cook, stirring occasionally, for 3 minutes, or until translucent. Add the garlic and cook for a further 2 minutes, stirring occasionally. Add the leek and continue cooking for 4 minutes, or until softened. Remove from the heat and spread evenly over a tray. Set aside to cool slightly.
Remove the sausage meat from the casings by pinching and squeezing it into a medium bowl. Add the onion mixture, thyme, pepper and 1 egg. Mix until well combined.
Place the remaining egg and water in a small bowl and whisk to combine.
Insert the wire rack into position 7. Select Phase Cook for P1 and set the oven to Bake, Convection, 400°F, for 10 minutes. Press Confirm for P2 and set the oven to Bake, Convection, 365°F, for 15 minutes and press Start to preheat. Meanwhile, continue to the next step.
Shape half of the sausage filling into a log along the center of one of the pastry sheets. Brush one edge with a little of the egg wash. Fold the pastry in half to enclose the filling. Trim the edge with a knife, using a fork to seal the edge. Repeat with the remaining pastry and filling. Cut each roll into 6 pieces.
Lightly grease the pizza pan and line with parchment paper. Arrange half the sausage rolls on the pan. Brush with a little of the egg wash and sprinkle with fennel seeds and salt flakes. Refrigerate the remaining sausage rolls until ready to bake.
Once preheated, place the pan in the oven and cook for 10 minutes in P1. The oven will automatically switch to P2. Halfway through cooking in P2 rotate the pan.
The pastry should be golden and flaky. To test if the filling is cooked, insert a digital thermometer into the center, it should read a minimum of 160°F. If not, cook it a little longer. Repeat cooking the remaining sausage rolls.
Serve the sausage rolls warm with tomato ketchup for dipping.
