Tender little pillows of gnocchi hanging out with best friends bacon and mushroom in a velvety cream sauce! Add a smattering of bright green peas and a duet of cheese and you have one happy comfort food dish. Serve on its own for a midweek meal or with a vibrant salad for a special occasion.

1 yellow onion
coarsely chopped
8 oz bacon slices
cut into ½-inch strips
8 oz baby bella mushrooms
stalks removed, quartered
2 tbsp olive oil
1 tsp kosher salt
plus extra to season
Freshly ground black pepper

1 lb gnocchi
1 cup (8 fl oz) heavy cream
1⅓ cups (7 oz) frozen peas
⅔ cup (1¾ oz) grated parmesan cheese
divided
1 tbsp flat-leaf parsley
plus extra to serve
½ cup (1¾ oz) shredded mozzarella cheese
Instructions
1Insert the wire rack into position 4. Set the oven to Air Fry, Super Convection, 400°F, for 20 minutes, enable Rotate Remind and press Start to preheat. Meanwhile, continue to the next step.
2Place the onion, bacon, mushrooms, oil, salt and pepper in a large bowl and toss to combine. Transfer to the roasting pan.
3Once preheated, place the pan in the oven and air fry for 20 minutes. When the Rotate Remind signals, stir and continue cooking. Meanwhile, continue to the next step.
4Bring a large pot of water to a boil over high heat. Add the gnocchi and cook according to the package instructions, then drain.
5Adjust the oven, select Phase Cook for P1 and set the oven to Roast, Super Convection, 400°F, for 2 minutes. Press Confirm for P2 and set the oven to Broil, High, for 3 minutes and press Start to preheat. Meanwhile, continue to the next step.
6Place the mushroom mixture in a large heatproof bowl. Set the pan aside. Add the cream, peas, half the parmesan and the parsley. Season with pepper and salt, then add the gnocchi and gently stir to combine.
7Pour the gnocchi mixture into the roasting pan. Sprinkle with the mozzarella and remaining parmesan.
8When the oven signals, place the pan in the oven and roast for 2 minutes in P1. The oven will automatically switch to P2.
9The cheese should be golden brown. If not, broil it a little longer.
Tip: It may need a little more or a little less extra cooking time, best to keep an eye on it.
