Ingredients
Measurements:
12 oz baby bell peppers
trimmed, halved lengthwise and seeds removed
8 oz grape tomatoes
1 red onion
thinly sliced
1 tsp kosher salt
Freshly ground black pepper
to season
1 tbsp olive oil
1 lb Italian sausages
Fresh basil
finely shredded
Instructions
1Insert the oven rack into position 2 Down. Set the oven to Air Fry, Super Convection, 400°F, for 20 minutes and press Start to preheat. Meanwhile, continue to the next step.
2Place the bell peppers, tomatoes, onion, salt, pepper and oil in a large bowl and toss to coat. Transfer to a sheet pan and spread out evenly. Add the sausages to the bowl and toss to coat in the residual oil. Place the sausages on the vegetables.
3Once preheated, place the pan in the oven and air fry for 20 minutes. When the oven signals, stir the vegetables, turn the sausages and continue cooking.
4When the oven signals at the end of cooking, set the oven to Broil, High, for 3 minutes and press Start.
5The peppers should be tender and the sausages should read 160°F when tested with a meat thermometer. If not, air fry them a little longer.
6Your sausages and peppers are ready to go. Yum! Sprinkle on some basil for a fresh finish, then grab a plate and dig in.
