Dip a large serving glass into the simple syrup to coat the rim, then dip into the shredded coconut.
To make the coffee cream, place the cream, ristretto and brown sugar in a liquid measuring cup. Whisk (or use a hand frother) until thick but still pouring consistency.
Place some ice into the serving glass. Pour over the coconut water and top with coffee cream. Garnish with toasted coconut flakes to serve.
