Ingredients

Measurements:

1 shot espresso
chilled
3½ fl oz iced water
Ice cubes
to serve
Raw sugar
to serve
Cinnamon stick
to garnish

For the coffee cream

1¾ fl oz heavy cream
1 ristretto espresso
chilled
½ oz brown sugar

Instructions

To make the coffee cream, place the cream, chilled ristretto and brown sugar in a liquid measuring cup. Whisk (or use a hand frother) until thick but still pouring consistency.

Combine the chilled espresso and water in a tall serving glass. Fill the glass with ice. Top with the coffee cream.

Sprinkle with raw sugar and use a blow torch to caramelize. Garnish with a cinnamon stick to serve.
